Ingredients:
PASTA:
1 box of extra large shell pasta
enough water to boil
salt
oil
FILLING:
1 container 32 oz part skim ricotta cheese
3 tablespoons chopped garlic
2 tablespoons oil
1 tablespoon oregano
1/2 cup parmesian cheese
1 tablespoon garlic salt
2 eggs
TOPPING/BAKING:
Spray Oil
Your choice Marinara or other bottled sauce
12 oz provolone cheese, grated
1/4 cup parmesian cheese
Instructions:
For shells: Bring water, salt and oil to a boil. Add shells and boil for 15 minutes. Drain. Run cold water over shells after draining hot water. Drain cold water again.
For filling: Heat oil and add garlic. Saute and brown until aromatic. Mix oil and garlic into a bowl and add all the rest of the filling ingredients. Mix thoroughly.
To complete: Place approx 2 tablespoons of filling into each shell. Place "open" shell side up on spray-oiled pan. Cover with your choice sauce. Bake 30 minutes at 350 degrees. After 30 minutes, add grated provolone and parmesian cheeses over top of shells and bake 15 more minutes. Remove and let stand 5 minutes. Serve and enjoy!
